Lime Flower Biscuits

- 1 cup butter softened shopping list
- 1/2 cup caster sugar shopping list
- 2 1/2 cups plain flour shopping list
- Zest of 2 limes finely grated shopping list
- 150g white chocolate, chopped shopping list
- 1/4 cup cream shopping list
How to make it
- Preheat oven to 150C. Line 2 x cookie trays.
- Mix softened butter by hand in large bowl until soft and smooth.
- Add sugar and half the lime zest then gradually add flour until dough is formed.Chill in fridge for approx 30 minutes until workable.
- Roll half the dough out onto floured bench top and cut 10 - 15 'flowers' - these will be the bottoms. (Of course you could use any shape you like but then you'd have to change the name of the biscuits!!) Place evenly on tray and bake for 10 - 15 minutes.
- (Follow same procedure for other half of dough but cut a small hole in the centre of the 'flower' - these will be your tops - to allow the filling to squeeze out.)
- Allow to cool on trays for 5 minutes prior to moving to rack.
- To make filling place chopped chocolate and remaining lime in small bowl.
- Bring cream to almost boiling point then pour into bowl over chocolate. Mix while hot to melt and blend well. Allow to cool and mix vigorously by hand to make light and creamy.
- Smear bottoms of biscuits with filling and sandwich with top while still warm.
- Enjoy!
