How to make it

  • Put mashed potatoes in a bowl big enough to mix in the egg
  • Mix in one egg until the potatoes are soft, the mixture should not be too loose or it will not hold together while frying
  • One egg should be enough for up 2 to 2 1/2 cups of potatoes, it's better to be a little dry
  • Melt enough shortening in a skillet to measure 1/4 inch deep
  • Spoon potato mixture in to hot skillet to make individual cakes about 4 inches across, in a 10 inch cast iron skillet I can fit 4 at a time
  • Salt and pepper each cake
  • Fry on first side until brown
  • Carefully flip so the cakes don't break apart, brown on second side
  • Depending on the size of your skillet you will probably need to fry in batches
  • Drain on paper towels, serve warm
