Mashed Potatocakes

- 2 to 2 1/2 cups cold mash potatoes (estimates are okay) shopping list
- 1 egg shopping list
- salt and pepper to taste shopping list
- 2 to 4 tablespoons shortening, depending on size of skillet shopping list
How to make it
- Put mashed potatoes in a bowl big enough to mix in the egg
- Mix in one egg until the potatoes are soft, the mixture should not be too loose or it will not hold together while frying
- One egg should be enough for up 2 to 2 1/2 cups of potatoes, it's better to be a little dry
- Melt enough shortening in a skillet to measure 1/4 inch deep
- Spoon potato mixture in to hot skillet to make individual cakes about 4 inches across, in a 10 inch cast iron skillet I can fit 4 at a time
- Salt and pepper each cake
- Fry on first side until brown
- Carefully flip so the cakes don't break apart, brown on second side
- Depending on the size of your skillet you will probably need to fry in batches
- Drain on paper towels, serve warm
