How to make it

  • Preheat oven to 425. Place asparagus in a single layer in shallow baking pan or jelly-roll pan. Drizzle with 2 T oil; toss until well coated. Roast asparagus 10 minutes or until tender and lightly browned.
  • Meanwhile, combine remaining olive oil, shallots, vinegar, salt and pepper in small bowl; stir until well blended. Let stand at least 5 minutes to allow flavors to blend.
  • Transfer asparagus to serving plate. Spoon dressing over asparagus.
  • 149 cal, 6g carbs, 14g fat
