Roast Asparagus With Shallot Vinaigrette

- 2 lb fresh asparagus shopping list
- 1/2 cup olive oil, divided shopping list
- 2 shallots, minced shopping list
- 2 T balsamic or white vinegar shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp black pepper shopping list
How to make it
- Preheat oven to 425. Place asparagus in a single layer in shallow baking pan or jelly-roll pan. Drizzle with 2 T oil; toss until well coated. Roast asparagus 10 minutes or until tender and lightly browned.
- Meanwhile, combine remaining olive oil, shallots, vinegar, salt and pepper in small bowl; stir until well blended. Let stand at least 5 minutes to allow flavors to blend.
- Transfer asparagus to serving plate. Spoon dressing over asparagus.
