Tuna Enchiladas Recipe
Don't let the tuna in an enchilada suprise you, I tried it with hesitation from a church mate and was surprised how tasty these are. Yummy. Enjoy

Ingredients
  • 10 corn or flour tortillas
  • 1 large white onion
  • 1 clove garlic
  • 1 can tomatoes diced
  • 8 ounce can tomato sauce
  • 1/4 cup tomato paste
  • 1/4 cup diced green chilies
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/4 teaspoon sugar
  • 1/2 teaspoon salt
  • Filling:
  • 13 ounce can tuna drained and flaked
  • 16 ounces sour cream
  • 8 ounces grated cheddar cheese
  • 1 teaspoon salt

Directions
  1. Sauté onion, garlic and diced tomatoes.
  2. Add tomato sauce, tomato paste, green chilies, cumin, oregano, sugar and salt.
  3. Simmer 15 minutes.
  4. Combine all filling ingredients and divide between tortillas.
  5. Pour some sauce on bottom of pan then place filled tortillas on top of sauce.
  6. Pour remaining sauce on top of enchiladas then sprinkle cheese on top.
  7. Bake at 325 for 20 minutes.
