Sweet Barbecue Sauce

- 3 Tablespoons extra-virgin olive oil or butter shopping list
- 2 Cups chopped onion shopping list
- 1/2 Cup red wine vinegar shopping list
- 4 cloves garlic, minced shopping list
- 1 large shallot, minced shopping list
- 1/4 Cup yellow mustard shopping list
- 1/2 Cup brown sugar, packed shopping list
- 2 Cups water shopping list
- 6 Tablespoons granulated sugar shopping list
- 2 Cups ketchup shopping list
How to make it
- In a large skillet, over medium heat, sauté onion and shallot in oil or butter until tender.
- Reduce heat to medium-low and add remaining ingredients except ketchup. Blend until sugar is dissolved.
- Pour into a saucepan and add ketchup.
- Simmer over low heat for 30 minutes or until sauce reduces to desired consistency. Best if simmered for 2 hours, adding water as needed.
- Serve on the side with pulled pork or pulled roast beef or combine with pulled meat or baste ribs during last 45 minutes of smoking.
- Or mix with pulled pork and serve on warm Kaiser rolls with sweet slaw. Garnish with dill pickle spears
