Dinosaur Asparagus For Children

- 8 green asparagus shopping list
- extra virgin olive oil shopping list
- puff pastry shopping list
- 4 yolks shopping list
- 2 cups of flour shopping list
- 1 vegetable stock shopping list
- butter shopping list
- 1 glass of white dry wine shopping list
- tarragon shopping list
- salt and pepper shopping list
How to make it
- Clean asparagus, eliminate external fibres and cut the hard stems.
- Cook for 20 minutes in boiling water in a vertical pot with tip up.
- Flavor asparagus and put them for few seconds in a pot with hot extra virgin olive oil, since they are crunchy.
- Dry and put on an absorbent shit.
- Couple asparagus with rectangular puff pastry stuffed with Parmisan cheese and closed as little balls (see photo) and with salt “zabaione” sauce.
- Preparation of salt “zabaione” sauce:
- Beat yolks with flour and vegetable stock, adding liquid butter and wine.
- Cook the sauce to low fire, adding minced tarragon, salt and pepper.
- Serve hot, simulating a dinosaur :)
