How to make it

  • Clean asparagus, eliminate external fibres and cut the hard stems.
  • Cook for 20 minutes in boiling water in a vertical pot with tip up.
  • Flavor asparagus and put them for few seconds in a pot with hot extra virgin olive oil, since they are crunchy.
  • Dry and put on an absorbent shit.
  • Couple asparagus with rectangular puff pastry stuffed with Parmisan cheese and closed as little balls (see photo) and with salt “zabaione” sauce.
  • Preparation of salt “zabaione” sauce:
  • Beat yolks with flour and vegetable stock, adding liquid butter and wine.
  • Cook the sauce to low fire, adding minced tarragon, salt and pepper.
  • Serve hot, simulating a dinosaur :)
