German Pickled Beets Recipe
Mom made pickled beets all the time when I was a kid. I think it was one of those "know it by heart" type of dishes because I couldn't find her recipe. Howeve after much experimentation I'm pretty close.

Ingredients
  • 6 cans of red beets with liquid
  • (or prepare 12 cups of cooked fresh beets reserving some water)
  • 1 cup apple cider vinegar
  • 1 cup brown sugar (granular okay, I just prefer brown)
  • 2 cinnimon sticks
  • 5 cloves
  • 1 tsp allspice
  • 1/2 tsp salt (optional)

Directions
  1. In a large pot, heat vinegar, 1 cup of water (or beet liquid), sugar and spices to boiling. Stir till sugar is disolved.
  2. Add beets, bring back to a boil then remove from heat.
  3. Cool.
  4. Remove cinnimon sticks and cloves if you can find them.
  5. Refrigerate overnight for best flavor. Serve chilled/cold.
