Beer Can Chicken

- 1 whole chicken, rinsed shopping list
- 3 tablespoons poultry seasoning, rub shopping list
- 1 can beer shopping list
- stainless steel beer can rack shopping list
- 1 each potato shopping list
How to make it
- Clean a whole chicken; remove giblets. Rinse chicken inside and out under cold water, drain and blot dry.
- Rub poultry seasoning to the outside of the chicken skin and the cavity. Experiment with various seasonings.
- Open a can of beer or soda and drink about half of it. Place the can with the other half of the liquid in the stainless steel rack.
- Position the chicken over the can on the stainless steel rack. Stuff a small potato or onion in the neck cavity. This will keep the moisture inside the chicken. I have also use an apple.
- Put the chicken in either a pie tin or aluminum foil (pinch up to form a rim). Add about 1/4 cup of water.
- Heat your grill on one side to medium-high. Place the chicken on the non-heated side of the grill. Cook until the thigh registers 180°F. This takes from 45 minutes to an hour on our grill. The skin should be golden brown and crisp.
- Let stand for 5 to 10 minutes. Then remove the chicken from the rack.
- Carve the chicken.
