Beer Can Chicken Recipe
A juicy chicken every time. This does require a stainless steel rack that is designed to hold a beverage can.

Ingredients
  • 1 whole chicken, rinsed
  • 3 tablespoons poultry seasoning, rub
  • 1 can beer
  • stainless steel beer can rack
  • 1 each potato

Directions
  1. Clean a whole chicken; remove giblets. Rinse chicken inside and out under cold water, drain and blot dry.
  2. Rub poultry seasoning to the outside of the chicken skin and the cavity. Experiment with various seasonings.
  3. Open a can of beer or soda and drink about half of it. Place the can with the other half of the liquid in the stainless steel rack.
  4. Position the chicken over the can on the stainless steel rack. Stuff a small potato or onion in the neck cavity. This will keep the moisture inside the chicken. I have also use an apple.
  5. Put the chicken in either a pie tin or aluminum foil (pinch up to form a rim). Add about 1/4 cup of water.
  6. Heat your grill on one side to medium-high. Place the chicken on the non-heated side of the grill. Cook until the thigh registers 180°F. This takes from 45 minutes to an hour on our grill. The skin should be golden brown and crisp.
  7. Let stand for 5 to 10 minutes. Then remove the chicken from the rack.
  8. Carve the chicken.
