Tomato Spinach And Olive Pasta Recipe

Ingredients
  • 1 TB olive oil
  • 1/2 a brown onion, diced
  • 1 tsp crushed garlic
  • 410g can of tomatos, diced
  • 50g tomato paste
  • 1/2 cup water
  • 150g frozen spinach
  • 12 kalamata olives, pitted and chopped coarsely
  • salt and pepper
  • 250g dry spagetti
  • grated parmesan cheese

Directions
  1. Brown onions in olive oil over medium heat.
  2. Add garlic and cook for a further minute.
  3. Add tomatos, tomato paste and water and bring to boil.
  4. Turn heat down and allow to simmer for approxmately 30 minutes.
  5. In the mean time, place spinach in microwave for 3-4 minutes to thaw. Once done squeeze out a much water as possible.
  6. Cook pasta according to packet directions (approximately 10-15 minutes) so that its ready when the sauce is ready.
  7. Add the spinach and olives to the sauce and allow the heat through.
  8. Drain the pasta and return to pan, add sauce and mix through.
  9. Serve with a sprinkling of parmesan cheese
  10. Enjoy!
