This a great refreshing salad that is perfect this time of year. Nice to make after a Sunday morning trip to the Farmers Market. The key is to let it marinate to really blend the flavors.

Ingredients
- 4 Large fresh Tomatoes sliced
- 2 Medium Videlia Onions sliced(or other sweet onion)
- 1/4 cup Olive Oil
- 2 Tablespoons Red wine Vinegar
- 2 Tbls. minced fresh parsley
- 1 teaspoon Salt
- 1 teaspoon Italian seasoning
- 1 teaspoon finley chopped onion
- 1/2 teaspoon sugar
- 1/4 teaspoon Garlic powder
- 1/4 teaspoon pepper
Directions
- Layer the Tomatoes and onions in a shallow serving dish( I use a glass pie pan)
- Combine all other ingredients in a jar with a lid
- Shake well and pour over tomatoes and onion slices
- Cover and refrigerate for atleast 2 hours before serving
- I sometimes throw in some chopped fresh herbs depending on what I have growing on the patio
