This a great refreshing salad that is perfect this time of year. Nice to make after a Sunday morning trip to the Farmers Market. The key is to let it marinate to really blend the flavors.

Ingredients
  • 4 Large fresh Tomatoes sliced
  • 2 Medium Videlia Onions sliced(or other sweet onion)
  • 1/4 cup Olive Oil
  • 2 Tablespoons Red wine Vinegar
  • 2 Tbls. minced fresh parsley
  • 1 teaspoon Salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon finley chopped onion
  • 1/2 teaspoon sugar
  • 1/4 teaspoon Garlic powder
  • 1/4 teaspoon pepper

Directions
  1. Layer the Tomatoes and onions in a shallow serving dish( I use a glass pie pan)
  2. Combine all other ingredients in a jar with a lid
  3. Shake well and pour over tomatoes and onion slices
  4. Cover and refrigerate for atleast 2 hours before serving
  5. I sometimes throw in some chopped fresh herbs depending on what I have growing on the patio
