Orange And Date Nut Bread

- 1 medium orange ( wash skin ) shopping list
- 1 cup soft pitted packaged dates shopping list
- 2 Tbs. margarine melted shopping list
- 1 tsp pure vanilla extract shopping list
- 1 large egg, fork beaten shopping list
- 2 cups flour shopping list
- 1/4 tsp salt shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1 cup sugar shopping list
- 1/2 cup chopped walnuts or pecans shopping list
How to make it
- Grate the rind from the orange .
- Squeeze juice into a measure cup adding boiling water to measure 1 cup.
- Chop dates in a food processor into small bite size pieces.
- Combine dates, rind and liquid.
- Stir in melted margarine,vanilla, egg and blend well.
- Combine flour, salt, baking powder and soda and beat well into date mixture.
- Stir in nuts.
- Bake in a greased and floured and wax paper lined pan ( 9 x 5 loaf ) and bake 350F 45 minutes or tested done with wooden toothpick.
- Remove from pan and cool well.
- Wrap and let sit overnight. Slice the next day.
- We eat it plain for breakfast but adding a cream cheese spread makes it even more special.
- I often bake many of my quickbreads in those disposable French style wood bread pans found at specialized kitchen stores..
- Bread freezes well.
