Butter Bean Soup With Sausage Recipe
This is a quick and easy soup. It's great with corn bread.

Ingredients
  • 3 andouille sausage links, sliced on an angle
  • 1 can (16 oz) large butter beans (or lima beans)
  • 1 can (10 oz) whole tomatoes, with juice - chopped
  • 2 carrots, peeled and shredded or diced
  • 1 small onion, diced
  • 1/4 cup chopped fresh thyme leaves
  • 2 cloces garlic, crushed

Directions
  1. In a medium stockpot, bring all ingredients to a boil. Salt and pepper to taste. Reduce heat and simmer 30 minutes or until the beans are tender and the sausage has shrunk to small disks. Serve hot.

My family will love this. We like to make healthy meals like this. I going to use a turkey sausage as we have never tried andouille sausage (I guess we need to try it since it's in your recipe and we need to try new things!)
