Butter Bean Soup with Sausage

- 3 andouille sausage links, sliced on an angle shopping list
- 1 can (16 oz) large butter beans (or lima beans) shopping list
- 1 can (10 oz) whole tomatoes, with juice - chopped shopping list
- 2 carrots, peeled and shredded or diced shopping list
- 1 small onion, diced shopping list
- 1/4 cup chopped fresh thyme leaves shopping list
- 2 cloces garlic, crushed shopping list
How to make it
- In a medium stockpot, bring all ingredients to a boil. Salt and pepper to taste. Reduce heat and simmer 30 minutes or until the beans are tender and the sausage has shrunk to small disks. Serve hot.
