How to make it

  • Prepare cake mix as directed on the box, and pour batter into a generously greased 9x13 pan.
  • Mix together diced rhubarb, sugar and cinnamon.
  • Sprinkle rhubarb mixture over top of cake batter.
  • Pour heavy cream over rhubarb layer.
  • Bake at 350 degrees for about 50 minutes.
  • Remove pan from oven and let cool on wire rack for 15 minutes.
  • Place a platter on top of the cake pan, then quickly flip it over, allowing cake to fall out onto it.
  • Serve warm or cold, but I love it best when it's still warm and topped with some fresh sweetened whipped cream!
