Cheaters Rhubarb Upside Down Cake

- 1 regular size white cake mix, prepared as directed on the box shopping list
- 3 cups diced rhubarb shopping list
- 1 1/3 cups white sugar shopping list
- 1 tablespoon cinnamon (use Saigon if you can) shopping list
- 8 ounces heavy cream or whipping cream shopping list
How to make it
- Prepare cake mix as directed on the box, and pour batter into a generously greased 9x13 pan.
- Mix together diced rhubarb, sugar and cinnamon.
- Sprinkle rhubarb mixture over top of cake batter.
- Pour heavy cream over rhubarb layer.
- Bake at 350 degrees for about 50 minutes.
- Remove pan from oven and let cool on wire rack for 15 minutes.
- Place a platter on top of the cake pan, then quickly flip it over, allowing cake to fall out onto it.
- Serve warm or cold, but I love it best when it's still warm and topped with some fresh sweetened whipped cream!
