How to make it

  • Cut potatoes into halves or quarters depending on size, you're aiming for chunks about 1inch square.
  • Boil them for 5-10 minutes, until the potatoes are cooked but not soft.
  • Rinse under cold water and leave to cool for a couple of minutes.
  • Meanwhile, beat the yoghurt with a fork, whisk or your preferred implement until it's smooth and lump-free.
  • Beat in the salt and pepper, and any herbs or spices you want to add.
  • Keep in the fridge until serving.
