Vermicelli Al Pesto Recipe

Ingredients
  • 1 pound package vermicelli
  • 2 cups packed fresh basil leaves
  • 1 cup olive oil
  • 2 cloves garlic
  • 1/2 cup pine nuts
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 cup parmesan cheese

Directions
  1. Cook vermicelli according to package directions.
  2. Process garlic first then add remaining ingredients in a blender and blend until smooth.
  3. Drain vermicelli reserving a small amount of pasta water.
  4. If pesto is too thick stir in one 4 tablespoons of reserved pasta water.
  5. Toss pasta with pesto.
