Tomato Bacon Soup

- 6 slices bacon diced shopping list
- 1 white onion diced shopping list
- 46 ounce can tomato juice shopping list
- 1/4 cup cornmeal shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon black pepper shopping list
How to make it
- In a 2 quart pot fry the bacon until lightly browned then drain off most of the fat.
- Add onion and sauté over medium heat until onion is transparent then add tomato juice.
- Heat to a simmer then add cornmeal stirring to avoid lumps.
- Cook until cereal is done approximately 25 minutes stirring occasionally.
- Add lemon juice, salt and black pepper then serve immediately.
