How to make it

  • In a 2 quart pot fry the bacon until lightly browned then drain off most of the fat.
  • Add onion and sauté over medium heat until onion is transparent then add tomato juice.
  • Heat to a simmer then add cornmeal stirring to avoid lumps.
  • Cook until cereal is done approximately 25 minutes stirring occasionally.
  • Add lemon juice, salt and black pepper then serve immediately.

    I gotta try this one.... wonder what would happen if you fried the corn along with the bacon and onion - the result might be a delicious gravy addition?
