Country Brunch Skillet

- 6 strips bacon shopping list
- 6 cups frozen cubed hash brown potatoes shopping list
- 3/4 cup chopped green pepper shopping list
- 1/2 cup chopped onion shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 6 eggs shopping list
- 1/2 cup shredded cheddar cheese shopping list
How to make it
- In large skillet over medium heat cook bacon until crisp.
- Remove from heat then crumble and set aside.
- Drain all but 2 tablespoons of drippings from pan.
- Add potatoes, green pepper, onion, salt and pepper to drip pings then cook and stir 2 minutes.
- Cover and cook stirring occasionally until potatoes are browned and tender about 15 minutes.
- Make six wells in the potato mixture and break 1 egg into each well.
- Cover and cook on low heat for 10 minutes then sprinkle with cheese and bacon.
