This is a great recipe for homemade pimiento cheese. My aunt gave me this recipe, she has been making it for years, it is so much better than the store bought stuff. I love this on bread, crackers and/or stuffed in celery. Enjoy

Ingredients
  • 3 ounces cream cheese softened
  • 1 cup grated sharp cheddar cheese
  • 1 cup grated Monterey Jack cheese
  • 1/2 cup mayonnaise
  • 3 teaspoons mashed pimientos
  • Salt and pepper to taste

Directions
  1. With an electric mixer beat cream cheese until fluffy.
  2. Add remaining ingredients and beat until well blended.
