Portobello  Mushroom Burgers Recipe
A nice vegetarian alternative to meat burgers. I made these for a ladies luncheon. Great flavor and great with cheese and seasoned mayo on them too

Ingredients
  • Olive Oil, extra virgin
  • garlic powder
  • salt and pepper
  • 1 large portabello mushroom cap per person
  • 1 soft sandwich roll per person
  • shredded lettuce
  • sliced tomato
  • sliced onion
  • shredded Gouda cheese
  • Dressing:( for 6 rolls ), multiply as needed
  • 1/2 cup mayonnaise ( light or low fat is fine too )
  • 1 tsp dill weed
  • 1tsp Dijon mustard
  • 1 tsp Italian seasoning

Directions
  1. Prepare dressing: mix all well and chill.
  2. To prepare burgers:
  3. wipe mushroom caps clean with damp paper towel.
  4. Brush each side liberally with olive oil.
  5. Season each side with garlic, salt and pepper.
  6. One may grill, broil or sauté the mushrooms till mushrooms release their juices and become softened and tender but not mushy.
  7. Baste with olive oil as desired .
  8. Do not over cook mushrooms .
  9. To prepare burgers, liberally spread the dressing on inside of each roll.
  10. Place on cooked hot mushroom, then cheese,( you want some of the cheese to melt ) lettuce, tomato and onion if desired.
  11. Top with other half of the roll.
  12. Serve immediately.
