Ingredients
  • 1 T olive oil
  • 1 pounds lean ground beef
  • 1/2 small onion, minced
  • 3/4 cup thick and chunky salsa
  • 1/2 tsp cinnamon
  • 1/8 tsp allspice
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 6 (10 inch) flour tortillas
  • vegetable oil for frying
  • Chimichanga Sauce
  • 4 ounces Cheddar cheese, shredded

Directions
  1. In large skillet, heat olive oil over medium heat.
  2. Add meat and cook.
  3. Break up the meat as it cooks, until no longer pink, about 3 minutes.
  4. Add onion and cook until onion is limp, about 3 minutes longer.
  5. Add salsa, cinnamon, allspice, Worcestershire sauce and salt.
  6. Simmer until mixture is nearly dry, about 6 to 8 minutes.
  7. Remove from heat.
  8. In a large dry skillet, soften the tortillas, one at a time, over medium heat.
  9. Turn once or twice until soft and pliable, about one minute total for each tortilla.
  10. Stack and cover to keep warm.
  11. Or wrap tortillas in damp paper towels and microwave on high for one minute or until hot.
  12. Preheat oven to 200F.
  13. Put 1 warmed tortilla on a plate.
  14. Spoon 1/6 of the filling in center.
  15. Fold bottom up over the filling.
  16. Fold the sides in and fold top down, overlapping.
  17. Secure with toothpicks.
  18. Repeat this process with all of the tortillas.
  19. In large skillet heat 2 T oil over medium heat.
  20. Add filled tortillas, 2 at a time, folded side down and fry until golden brown, about 2 minutes.
  21. Turn and brown other side, about 1 minute.
  22. Place on a baking sheet and keep warm in the oven while frying the other chimichangas.
  23. When all are cooked, transfer the chimichangas to plates and ladle the sauce on top.
  24. Sprinkled shredded Cheddar cheese on top.
  25. Serve at once.
