Ingredients
  • 8 (6") corn tortillas
  • 1 can (10oz) enchilada sauce
  • 1 can (15 oz) dark red kidney beans (drained)
  • 1 cup shredded cooked turkey
  • 1 cup shredded taco-flavored cheese

Directions
  1. Make your handy dandy handles and get them in place in the crock.
  2. Place 1 corn tortilla in bottom of crock pot.
  3. Spoon small amount of enchilada sauce, beans, turkey and cheese over tortilla.
  4. Continue layering process until tortillas are gone.
  5. Make sure that last layer is cheese.
  6. Cook on love 6-8 hours
  7. OR
  8. Cook on high 3-4 hour
  9. Pull out by foil handles and slice into pie shaped wedges.

Gotta love cookin' these on love for 6-8 hours! They sound wonderful. I will try them. Bet my step-pigs will like them. ("Pigs" isn't a typo, LOL.)
