pasta salad with pesto and fried mushrooms

- 250g fusilli shopping list
- 2-3 tablespoons of basil-pesto shopping list
- 1 shallot, finely diced shopping list
- 4 strips of streaky bacon, cut in small cubes or strips shopping list
- 150g cremini mushrooms, sliced shopping list
- a hand full of fresh tyme shopping list
- freshly ground salt and pepper shopping list
- a hand full of lightly roasted pine nuts shopping list
How to make it
- boil some salted water in a pan and cook the fusilli until al dente.
- heat some olive oil in a frying pan, cook the shallots until just turning soft, add cremini mushrooms and cook until soft. then add the bacon and fry until lightly browned and add thyme. season with salt and pepper and mix well.
- drain pasta, put in a bowl and mix with the pesto while pasta is still warm. then add mushroom mixture, mix well and sprinkle with the pine nuts.
- tuck in!
