How to make it

  • boil some salted water in a pan and cook the fusilli until al dente.
  • heat some olive oil in a frying pan, cook the shallots until just turning soft, add cremini mushrooms and cook until soft. then add the bacon and fry until lightly browned and add thyme. season with salt and pepper and mix well.
  • drain pasta, put in a bowl and mix with the pesto while pasta is still warm. then add mushroom mixture, mix well and sprinkle with the pine nuts.
  • tuck in!
