WESTERN STYLE FRITTATA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Willingham Estate in Fort Worth, Texas in 1984.

Ingredients
  • 2 tablespoon butter
  • 4 ounces Canadian bacon
  • 2 medium onions sliced
  • 7 eggs
  • 1/2 cup cheese
  • 1/4 teaspoon pepper

Directions
  1. In skillet with ovenproof handle heat butter.
  2. Slice bacon in 1/2" strips then add to butter and cook 1 minute.
  3. Add onions then cook 3 minutes more stirring frequently.
  4. Remove from heat then set aside.
  5. Beat eggs, cheese, pepper and bacon onion mixture.
  6. Place mixture back in skillet and cook 15 minutes over low heat until bottom is set.
  7. Place under broiler until top is set and lightly browned about 3 minutes.
