Ingredients
  • 2 pork tenderloins, about 3/4 lbs each
  • Marinade
  • 1/2 C peach preserves
  • 2 Tbl Dijon mustard
  • 2 tsp oil
  • 1/4 tsp dried thyme leaves
  • 1/4 tsp salt

Directions
  1. Mix all marinade ingredients together
  2. Place pork tenderloins in a resealable freezer bag
  3. Add marinade, seal and turn bag to coat pork well
  4. Refrigerate, turning ocassionally for 1 to 8 hours
  5. Heat grill or coals to medium
  6. Cover and grill pork 4 to 5 inches from heat for about 25 to 30 minutes , turning once and brushing often with marinade
  7. Heat remaining marinade to boiling and cook 1 minute
  8. Cut pork into slices and serve with marinade

I LOVE fruit marinades/sauces, especially with grilled meats - this sounds fantastic, Pat, and since we grill a tenderloin probably once a week in the summer, this will definitely be on the menu soon...makes me drool to look at that picture!
