Summer Vegetable and Lobster Gazpacho

- 5 cups tomatoes, chopped shopping list
- 1 cup red bell pepper, chopped shopping list
- 1 cup green bell pepper, chopped shopping list
- 1 1/2 cups english cucumber, peeled and chopped shopping list
- 1/2 cup red onion, chopped shopping list
- 1/2 cup olive oil shopping list
- 1/4 cup sherry wine vinegar shopping list
- 1/2 cup lobster or clam broth shopping list
- 1/4 cup cilantro or parsley, chopped shopping list
- 1/2 cup jalapeno pepper, seeded and finely chopped shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 6 ounces cooked lobster meat, diced shopping list
How to make it
- In batches, process tomatoes, red pepper, green pepper, cucumber, onion, olive oil, vinegar and broth in food processor until finely chopped
- Stir in cilantro or parsley, jalapeno, salt and pepper
- Chill
- Fill bowls with soup
- Garnish with lobster meat

I'm with you on the lobster, but this sounds really good! I'm sure the rest of the family would volunteer to take care of the lobster for me!
