Chicken Fingers kicked up a little with the addition of pecans to the breading

Ingredients
  • 4 cups Panko breadcrumbs
  • 1 cup pecans, finely chopped
  • 2 tbls crushed red pepper
  • 3/4 tbls pepper
  • 1 tbls salt
  • 3 eggs
  • 1 cup flour
  • 2-2 1/2 lb. chicken tenderloins
  • Oil to fry

Directions
  1. Add oil to fry pan and heat to 350
  2. Combine panko, pecans, red pepper flakes, salt, and pepper into a shallow dish
  3. Beat eggs into shallow dish
  4. Add flour to shallow dish
  5. Dip chicken into flour, then egg, then breadcrumb mixture
  6. Repeat until all chicken is coated
  7. Cook chicken in batches until golden brown on both sides
