Mexican Corn Bread

- 1 1/2 cups corn muffin mix 1/2 cup milk shopping list
- 2 eggs shopping list
- 1 can (12 oz.) corn or 1 cup fresh corn shopping list
- 1 1/2 cups grated cheddar cheese shopping list
- 1/3 cup chopped green chiles shopping list
- 1/4 cup chopped pimientos shopping list
- 3 Tbsp. green chile salsa shopping list
How to make it
- Preheat oven to 400.F
- In bowl, blend muffin mix, milk and eggs until batter is lightly mixed. Add corn, cheese, chiles, pimientos and salsa. Blend gently.
- Spread into a lightly buttered 9-inch square baking dish.
- Bake for 45 min. or until a tester inserted in center comes out clean. Cool for 5 min. Cut into squares.

We eat it here at my house to when we have a big pot of pintos but my recipe is different. Sounds very good.
