At our House we think this is a very good corn bread, very flavorful. Good served with chili, pot of beans, breakfast with eggs or any kind of meat dish.

Ingredients
  • 1 1/2 cups corn muffin mix 1/2 cup milk
  • 2 eggs
  • 1 can (12 oz.) corn or 1 cup fresh corn
  • 1 1/2 cups grated Cheddar cheese
  • 1/3 cup chopped green chiles
  • 1/4 cup chopped pimientos
  • 3 Tbsp. green chile salsa

Directions
  1. Preheat oven to 400.F
  2. In bowl, blend muffin mix, milk and eggs until batter is lightly mixed. Add corn, cheese, chiles, pimientos and salsa. Blend gently.
  3. Spread into a lightly buttered 9-inch square baking dish.
  4. Bake for 45 min. or until a tester inserted in center comes out clean. Cool for 5 min. Cut into squares.

We eat it here at my house to when we have a big pot of pintos but my recipe is different. Sounds very good.
