Spinach Gnocchi With Roasted Peppers Recipe
A light, healthy dish from Cooking Light. Cook time includes boiling potato and charring peppers.

  • 1 medium-size red potato (about 1/2 lb)
  • 2 large sweet red peppers (about 1 lb)
  • 2 large sweet yellow peppers (about 1 lb)
  • Olive oil flavored cooking spray
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 egg, beaten
  • 1 cup plus 2 T all purpose flour, divided
  • 3/4 cup finely chopped fresh spinach
  • 1/2 tsp salt
  • 14 cups water
  • 1/2 cup grated Asiago cheese
  • 1 1/2 T chopped fresh basil

Directions
  1. Cook potato in boiling water to cover 25 minutes or until tender. Drain and let cool. Peel potato, and place in a large bowl; mash. Set aside.
  2. Cut peppers in half lengthwise; remove and discard seeds and membrane. Place peppers, skin side up, on a baking sheet; flatten with palm of hand. Broil peppers 5 1/2 inches from heat (with electric oven door partially opened) 15 to 20 minutes or until charred. Place peppers in ice water until cool. Remove peppers from water; peel and discard skins. Coarsely chop peppers. Set aside.
  3. Coat a large nonstick skillet with cooking spray. Place over medium-high heat until hot. Add onion and garlic; saute until tender. Add onion mixture and egg to potato; stir well. Stir in 3/4 cup flour, spinach, and salt.
  4. Sprinkle remaining 1/4 cup plus 2 T flour evenly over work surface. Turn potato mixture out onto floured surface, and knead until flour is incorporated.
  5. Divide potato mixture into thirds. Roll each portion into a 12-inch rope. Cut each rope into 12 (1-inch) pieces. Shape each piece into a ball.
  6. Place balls on a baking sheet coated with cooking spray. Dip a fork in flour, and drag the tines through half of each ball, forming a concave shape.
  7. Bring 14 cups water to a boil in a large Dutch oven. Add half of gnocchi, and cok 1 1/2 minutes. (Do not overcook). Remove gnocchi, using a slotted spoon; drain well. Repeat procedure with remaining half of gnocchi.
  8. Place gnocchi in a 9-inch gratin or quiche dish coated with cooking spray. Sprinkle with roasted peppers and cheese. Broil 5 1/2 inches away from heat (with electric oven door partially opened) 1 to 1 1/2 minutes or until cheese mets. Sprinkle with basil. Serve immediately. 4 servings.
