Ingredients
  • 15 oz. cooked salmon
  • 4 tbsp. butter
  • 4 tbsp. flour
  • Salt and pepper to taste
  • 1/2 cups milk
  • 2 cups grated cheddar cheese
  • 1/2 cup chopped celery
  • 2 medium carrots, grated
  • 1 medium onion, chopped finely
  • 3 cups prepared mashed potatoes

Directions
  1. Flake salmon. Make a white sauce from butter, flour, seasonings and milk. When its thick, remove from heat; add grated cheese; stir to combine until cheese is melted. Add flaked salmon, celery, carrot and onion. Pour mixture into buttered shallow 2 quart casserole dish. Pipe potatoes around edge. (I simply cover the salmon mixture with potatoes.) Bake at 450 F for 30 to 40 minutes, until bubbly and potates are nicely browned.
