How to make it

  • beat butter, rind ,sifted icing sugar and orange flower water in a bowl with electric mixer until light and fluffy. add eggs gradually, beat until just combined. transfer mixture to a large bowl. stir in sifted flour and ground almonds , mix to a soft dough. wrap dough in plastic and refrigerate 30 minutes.
  • roll tablespoons of mixture into balls. place about 4 cm apart on greased oven trays, flatten slightly, press halved nuts into centres bake cookies in moderate oven about 15 minutes or until lightly browned. cool cookies on trays. makes about 45
