This is entirely my daughter's recipe.If you like mint,these are the cookies for you!

Ingredients
  • 1 T.cornstarch
  • 1/2 C.shortening
  • 1/2 C.butter
  • 2 C.flour
  • 1/2 C.granulated sugar (optional)
  • 1 C.packed brown sugar
  • 2 eggs
  • several drops green food coloring
  • 1 1/2 tsp.pure mint extract
  • 1/2 tsp.baking soda
  • 12 oz.mint flavored m&m's
  • **We make these without the granulated sugar and they still taste great!**

Directions
  1. Preheat oven to 350 degrees.
  2. In large mixing bowl,cream butter,food coloring and shortening.
  3. Add eggs,cornstarch,mint extract,half the flour,sugars and soda.
  4. Beat until thoroughly combined,then add remaining flour and beat for approx 45 seconds.
  5. Stir in mint m&m's.
  6. Scoop by LARGE spoonfulls onto ungreased cookie sheet.
  7. Bake for approx 16 minutes.
  8. *Makes 15-16 large cookies*
