How to make it

  • Preheat oven to 425 degrees.
  • Grease twelve muffin pan cups, or line them with cupcake wrappers.
  • In large mixing bowl, combine first six ingredients.
  • In another bowl, mash peaches with a potato masher, add rose hips to the mashed peaches, let sit about 10 minutes, then stir in remaining ingredients.
  • Add peach mixture to flour mixture and stir just until ingredients are moistened.
  • Spoon the batter into muffin pan.
  • Bake 15 to 18 minutes or until tops are golden.
  • When cooled you can frost them and top with the chopped rose petals.

    Well now that I know what rose hips are, I'm gonna have to try this out soon! I'm a sucker for almost anything with peach in it! ;D
