Peachy Rosey Muffins

- 1 3/4 C AP flour shopping list
- 1/2 C light brown sugar shopping list
- 1/2 C walnuts shopping list
- 1 t baking soda shopping list
- 1/2 t salt shopping list
- 1/4 t cinnamon shopping list
- 1 C fresh peaches shopping list
- 2 eggs shopping list
- 1/2 C light olive oil shopping list
- 1/3 C buttermilk shopping list
- 1/2 C Dried rose hips shopping list
- 2 t Good quality vanilla extract with seeds shopping list
- cream cheese frosting -optional shopping list
- rose petals washed & chopped -optional shopping list
How to make it
- Preheat oven to 425 degrees.
- Grease twelve muffin pan cups, or line them with cupcake wrappers.
- In large mixing bowl, combine first six ingredients.
- In another bowl, mash peaches with a potato masher, add rose hips to the mashed peaches, let sit about 10 minutes, then stir in remaining ingredients.
- Add peach mixture to flour mixture and stir just until ingredients are moistened.
- Spoon the batter into muffin pan.
- Bake 15 to 18 minutes or until tops are golden.
- When cooled you can frost them and top with the chopped rose petals.
