I had each individual item with something else and I just threw the leftovers together and it turned out delicious!

Ingredients
  • 1 can black beans
  • 1 small can corn
  • 4 Thin cut chicken breasts
  • salt & pepper
  • olive oil non stick spray
  • PICO PUREE:
  • 2 tomatoes, seeded
  • 1/2 onion
  • 1/2 jalapeno, seeded
  • 1 c. cilantro (I like alot, feel free to reduce the amount)
  • 1 T. garlic, minced

Directions
  1. PICO PUREE: Put tomatoes, onion, jalapeno, cilantro and garlic in food processor and puree to a slightly chunky texture.
  2. Pour black beans and corn into saucepan.
  3. Add 1/4 c. puree and heat over med. low heat, let simmer.
  4. Season both sides of chicken with salt & pepper.
  5. Spray large skillet with olive oil non-stick spray and heat at medium.
  6. Saute chicken until cooked through.
  7. Plate chicken and top with bean/corn mixture and then pico puree.
  8. Serve with warm tortillas.
