How to make it

  • PICO PUREE: Put tomatoes, onion, jalapeno, cilantro and garlic in food processor and puree to a slightly chunky texture.
  • Pour black beans and corn into saucepan.
  • Add 1/4 c. puree and heat over med. low heat, let simmer.
  • Season both sides of chicken with salt & pepper.
  • Spray large skillet with olive oil non-stick spray and heat at medium.
  • Saute chicken until cooked through.
  • Plate chicken and top with bean/corn mixture and then pico puree.
  • Serve with warm tortillas.
