Swiss Potato Kugel

- 4 cups diced fresh potatoes shopping list
- 1 cup minced onion shopping list
- Real butter shopping list
- 8oz shredded Swiss shopping list
- 1/4 cup flour shopping list
- 1 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 3 eggs, lightly beaten shopping list
- 3/4 cup half-and-half shopping list
- fresh thyme leaves shopping list
- tomato slices shopping list
How to make it
- While potatoes are cooking (I did mine in the microwave so they wouldn't be too moist), mince and then saute onion in butter.
- Heat oven to 350.
- Pour onion into large bowl; add potatoes.
- Toss cheese with flour, salt and pepper; gently stir into vegetables.
- Combine eggs and cream; stir into potato mixture.
- Spoon into a greased 9" baking dish.
- Bake for 20-30 minutes or until golden brown.
- When serving, garnish with torn thyme leaves on top and tomato slices on the side.
