Swiss Potato Kugel Recipe
This was creamy and surprisingly sweet. I served it with a broccoli dish and some fresh sliced tomatoes for a vegetarian supper. Then, of course, we ate cookies! From Country magazine.

Ingredients
  • 4 cups diced fresh potatoes
  • 1 cup minced onion
  • Real butter
  • 8oz shredded Swiss
  • 1/4 cup flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 3 eggs, lightly beaten
  • 3/4 cup half-and-half
  • Fresh thyme leaves
  • Tomato slices

Directions
  1. While potatoes are cooking (I did mine in the microwave so they wouldn't be too moist), mince and then saute onion in butter.
  2. Heat oven to 350.
  3. Pour onion into large bowl; add potatoes.
  4. Toss cheese with flour, salt and pepper; gently stir into vegetables.
  5. Combine eggs and cream; stir into potato mixture.
  6. Spoon into a greased 9" baking dish.
  7. Bake for 20-30 minutes or until golden brown.
  8. When serving, garnish with torn thyme leaves on top and tomato slices on the side.
