I've fooled my "thinks corn chips are vegtables" husband with these, he loves them and does not notice the veggies!! The kids love them. Works good in a loaf or 8x8 pan too.

Ingredients
  • 1lb ground turkey
  • 1lb light bulk italian sausage
  • 6 slices of bread
  • 3 small zucchini, shredded
  • 1 1/2 cups shredded Italian cheese blend
  • 2 eggs
  • 1 pk onion soup mix
  • 1/2 c. onion, diced small
  • 1 tsp kosher salt
  • 5 cranks of fresh ground black pepper
  • a couple shakes of garlic powder.
  • shredded Parmesan, Romano, Asagio cheese, like you put on spagetti

Directions
  1. Tear up bread in to small pieces.
  2. Mix all ingredients untill it's all encorporated.
  3. Using an ice cream scoop, or eye-balling it, make twelve balls and place them in the cups of a muffin pan.
  4. Sprinkle with shredded Parmesan, Romano, Asagio.
  5. Bake at 350 for 30 minutes.

Oh that is so inspired!


I sure wish I'd thought of this "5" fork idea when my children were little. It would have been so much easier getting them to eat meatloaf. Thank you Morninlite, I'll pass this along to my daughters.
