  • precook the bacon and onions
  • in the bacon fat cook the the greens and add the onions
  • when the greens are good and flavored with the fat add the eggs
  • stir often, when the eggs are cooked the dish is done.

    I made this for Mother's Day today and it was awesome! What a difference it makes to boil and rinse several times without putting any salt in first! Very tender! I did substitute a ham hock in place of the bacon...it's a Southern thing...Thank you so much for sharing!

    For many, especially in Appalachia, poke salet is a traditional spring food. (By the way, "salet" has many acceptable spellings, e.g., "sallet," "salat.")

    there is poke salad growing all over town where I live. Kudzu is not the same thing!
    It's all in the seasoning when it comes to greens.
