Ingredients
  • 2 bushels of fresh picked greens
  • 1 pound of bacon
  • 1 bunch of green onions
  • 6 eggs

Directions
  1. you can find poke salet most anytime in the spring google it.
  2. clean and boil
  3. rinse
  4. clean
  5. rinse and boil 2 more times
  6. precook the bacon and onions
  7. in the bacon fat cook the the greens and add the onions
  8. when the greens are good and flavored with the fat add the eggs
  9. stir often, when the eggs are cooked the dish is done.

There is poke salad growing all over town where I live. Kudzu is not the same thing!
It's all in the seasoning when it comes to greens.

Poke Salet

For many, especially in Appalachia, poke salet is a traditional spring food. (By the way, "salet" has many acceptable spellings, e.g., "sallet," "salat.")


I made this for Mother's Day today and it was awesome! What a difference it makes to boil and rinse several times without putting any salt in first! Very tender! I did substitute a ham hock in place of the bacon...it's a Southern thing...Thank you so much for sharing!
