Ingredients

2 bushels of fresh picked greens

1 pound of bacon

1 bunch of green onions

6 eggs

Directions

clean and boil

rinse

clean

rinse and boil 2 more times

precook the bacon and onions

in the bacon fat cook the the greens and add the onions

when the greens are good and flavored with the fat add the eggs

stir often, when the eggs are cooked the dish is done.

Poke Salet

For many, especially in Appalachia, poke salet is a traditional spring food. (By the way, "salet" has many acceptable spellings, e.g., "sallet," "salat.")
