Pork Chops With Dijon Cream Sauce Recipe
PORK CHOPS WITH DIJON CREAM SAUCE This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Clover Estate in Arlington, Texas in 1989.

Ingredients
  • 1/3 cup evaporated milk
  • 1-1/2 tablespoons Dijon mustard
  • 1 pound boneless center cut pork loin chops 1/2" thick
  • 1/2 teaspoon salt
  • 1/3 cup chicken broth
  • 1/2 teaspoon coarsely ground pepper

Directions
  1. Trim fat from chops then sprinkle both side of chops evenly with salt and pepper.
  2. Coat a large nonstick skillet with cooking spray then place over medium high heat until hot.
  3. Add chops to skillet and cook 4 minutes on each side or until browned.
  4. Remove chops from skillet and keep warm.
  5. Add broth to skillet stirring to loosen browned bits.
  6. Combine mustard and half and half then add to skillet.
  7. Reduce heat and simmer 7 minutes or until sauce is thickened slightly.
  8. Spoon sauce over chops.
