Chicken Tettrazini Recipe

Ingredients

1/2 onion chopped

1 large garlic clove minced

1 cup mushrooms sliced thin

4 tablespoons butter plus one 1 extra tablespoon

3 1/2 tablespoons flour

1/2 teaspoon salt

1/4 teaspoon pepper

1 cup chicken broth

1 cup 18% cream

2 tablespoons cooking sherry (optional)

2 cups diced and sauteed chicken

1/2 cup fresh parmesan cheese

dash cayene pepper

Directions

2/3 to 3/4 of package of broad/large egg noodles (use the clear bag that says NO YOLKS the noodles are eggless...and very good for this recipe.

Cook noodles in large pot of salted water. Set aside.

Melt the 1 tablespoon butter in pan, add onion, garlic, mushrooms over medium heat (do not brown, just cook until softened).

Remove from pan and set aside. Now melt 4 tbls butter and add the flour over medium heat stir until well mixed.

Now wisk in cream, broth and add the salt, sherry and cayenne.

Stir over medium heat until slightly thickened.

Now add cooked chicken, and mushroom onion mixture into large casserole dish.

Sprinkle with the 1/2 cup fresh parmesan and just a tiny sprinkle of paprika for colour.

Bake at 400 for 30 minutes.
