Ingredients
  • 1 pound fresh shrimp cooked
  • 1 can water chestnuts
  • 1 cup fresh mushrooms sliced
  • 1 medium white onion sliced
  • 1 cup celery sliced diagonally
  • 1-1/2 pounds fresh asparagus steamed
  • 11 ounce can mandarin orange sections drained
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons granulated sugar
  • 2 tablespoons soy sauce
  • Boiled rice

Directions
  1. Shell and devein shrimp.
  2. Drain and slice water chestnuts.
  3. Arrange shrimp, chestnuts, mushrooms, onion, celery, asparagus and oranges on large tray.
  4. Heat oil in wok or electric skillet.
  5. Add onion, celery, salt, pepper and sugar then cook stirring until vegetables are crisp tender.
  6. Add asparagus and shrimp then place mushrooms and water chestnuts over shrimp.
  7. Sprinkle with soy sauce then place orange sections on top.
  8. Cover and cook until mixture begins to steam then reduce heat.
  9. Simmer 12 minutes then serve over rice.
