Apricot-Dijon Glazed Porkchops Recipe
These sweet yet tangy Porkchops are a winner. A variation one on the Honey-Mustard idea.

Ingredients
  • 1/2 cup - apricot preserves
  • 3 tablespoons - Dijon mustard
  • 6 - 3/4 inch thick pork loin chops
  • - salt
  • - pepper
  • 1 - small bunch chopped scallions

Directions
  1. Combine the apricot preserves and mustard in a small saucepan.
  2. Cook over low heat until the mixture is melted and smooth, stirring
  3. occasionally.
  4. While the glaze is cooking, oil a racked broiling pan.
  5. Sprinkle the pork chops with salt and pepper and place on the prepared pan.
  6. Broil the pork about 5 inches from the broiler for five minutes.
  7. Heavily coat the chops with half of the apricot glaze.
  8. Flip the pork over and broil for another five minutes.
  9. Brush with the remaining glaze. Broil for two additional minutes. Place on a serving platter and sprinkle with the scallions. Serve hot.
