How to make it

  • Combine the apricot preserves and mustard in a small saucepan.
  • Cook over low heat until the mixture is melted and smooth, stirring
  • occasionally.
  • While the glaze is cooking, oil a racked broiling pan.
  • Sprinkle the pork chops with salt and pepper and place on the prepared pan.
  • Broil the pork about 5 inches from the broiler for five minutes.
  • Heavily coat the chops with half of the apricot glaze.
  • Flip the pork over and broil for another five minutes.
  • Brush with the remaining glaze. Broil for two additional minutes. Place on a serving platter and sprinkle with the scallions. Serve hot.
