Apricot-Dijon Glazed Porkchops

- 1/2 cup - apricot preserves shopping list
- 3 tablespoons - Dijon mustard shopping list
- 6 - 3/4 inch thick pork loin chops shopping list
- - salt shopping list
- - pepper shopping list
- 1 - small bunch chopped scallions shopping list
How to make it
- Combine the apricot preserves and mustard in a small saucepan.
- Cook over low heat until the mixture is melted and smooth, stirring
- occasionally.
- While the glaze is cooking, oil a racked broiling pan.
- Sprinkle the pork chops with salt and pepper and place on the prepared pan.
- Broil the pork about 5 inches from the broiler for five minutes.
- Heavily coat the chops with half of the apricot glaze.
- Flip the pork over and broil for another five minutes.
- Brush with the remaining glaze. Broil for two additional minutes. Place on a serving platter and sprinkle with the scallions. Serve hot.
