This is like a puff meringue, spoon from dish and serve along with a sauce. No flour in the recipe, just risen by the whites.

Ingredients
  • 3 cups fresh strawberries
  • 1/4 cup sugar
  • 6 egg whites
  • 1/4 cup sugar
  • Custard or cream suce to accompany
  • Mint leaves to garnish

Directions
  1. Make a puree with the berries and sugar in the food processor
  2. Make a meringue by beating egg whites with sugar until stiff but not dry
  3. Gently combine whites into puree.
  4. Fill souffle dish or casserole dish with mixture.
  5. Flatten ( even ) top with spatula
  6. Bake on lower oven shelf, in a preheated 400F oven 8 to 15 minutes or just getting browned around edges
  7. Serve immediately with a cream or custard sauce on the side
