How to make it

  • Make a puree with the berries and sugar in the food processor
  • Make a meringue by beating egg whites with sugar until stiff but not dry
  • Gently combine whites into puree.
  • Fill souffle dish or casserole dish with mixture.
  • Flatten ( even ) top with spatula
  • Bake on lower oven shelf, in a preheated 400F oven 8 to 15 minutes or just getting browned around edges
  • Serve immediately with a cream or custard sauce on the side

    very nice indeed, I should make this tonight since I have the ingredients - and I took out eggs to let get to room temp - since I was looking for something extra delicious
