How to make it

  • Preheat oven to 375 degrees
  • In a large bowl, combine 2/3 cup sugar and cornstarch and mix well
  • Add raspberries and toss to coat
  • Transfer mixture to a 1 1/2 quart casserole or baking dish
  • In a small bowl, combine flour, baking soda and salt
  • In bowl of electric mixer, beat together butter and remaining 1/3 cup sugar until light and fluffy
  • Beat in egg white
  • On low speed, beat in half of flour mixture
  • Beat in buttermilk, then remaining flour mixture
  • Drop batter by heaping tablespoons into 8 mounds over the raspberries
  • For topping, combine sugar and cinnamon and sprinkle over batter
  • Bake 35 to 40 minutes or until fruit is bubbly and topping is golden brown
  • Let cool 30 minutes and serve with frozen yogurt!

    Will try this tonight!!! Although since there are only two of us I will modify the recipe and make a smaller portion. Thank you for posting this recipe.

    My mom used to make cobbler all the time when I was a kid. She would use blackberries that we picked in our neighborhood. This recipe sounds delish!
