Tomato Basil Cheese Logs

- 1/3 cup dried tomatoes shopping list
- 2 packages (8 ounces each) cream cheese, softened shopping list
- 1/3 cup chopped fresh basil shopping list
- 1/4 cup freshly grated parmesan cheese shopping list
- 1/2 teaspoon coarsely ground black pepper shopping list
- 1/2 cup pine nuts (pignoli), toasted and finely chopped shopping list
How to make it
- 1. Soak dried tomatoes in enough boiling water to cover until softened, about 15 minutes. Drain tomatoes well, then finely chop.
- 2. In small bowl, with mixer at medium speed, beat cream cheese until light and creamy, about 1 minute. Stir in tomatoes, basil, Parmesan, and pepper.
- 3. On waxed paper, shape half of cheese mixture into 6-inch log; roll up in waxed paper. Repeat with remaining cheese mixture. Refrigerate until chilled and firm, at least 1 hour. Roll logs in pine nuts; wrap and chill 15 minutes longer. Makes two 6-inch logs, 12 servings each.
