How to make it

  • 1. Soak dried tomatoes in enough boiling water to cover until softened, about 15 minutes. Drain tomatoes well, then finely chop.
  • 2. In small bowl, with mixer at medium speed, beat cream cheese until light and creamy, about 1 minute. Stir in tomatoes, basil, Parmesan, and pepper.
  • 3. On waxed paper, shape half of cheese mixture into 6-inch log; roll up in waxed paper. Repeat with remaining cheese mixture. Refrigerate until chilled and firm, at least 1 hour. Roll logs in pine nuts; wrap and chill 15 minutes longer. Makes two 6-inch logs, 12 servings each.
