This is a delicious pie....its easy to make and everyone loves it... Simple but elegant...

Ingredients
  • 1 16 oz part-skim-milk ricotta cheese
  • 1/2 cup sugar
  • 1 tablespoon all purpose flour
  • 2 eggs
  • 1 tablespoon grated lemon zest
  • 1 teaspoon vanilla
  • 1/3 cup mini chocolate morsels or chopped pistachios
  • 1 prepared pie shell, thawed
  • Whipped cream and chopped pistachios for garnish

Directions
  1. Preheat oven to 350 degrees.
  2. Beat ricotta, sugar, flour, eggs, zest, vanilla until smooth.
  3. Stir in chocolate; scrape into pie shell.
  4. Bake at 350 degrees for 40 minutes or until knife comes out clean.
  5. Cool on rack.
  6. Chill.
  7. Serve cold.
  8. Garnish with whipped cream and chopped pistachios
