How to make it

  • Crush the biscuits into fine crumbs and place in a bowl.
  • Add the diced cherreis, coconut and condensed milk and mix well until it forms clumps.
  • Take a teaspoonful of the mixture and roll int a bal then toss into the coconut and coat it well. Shake off the excess and place the ball on a plate. Continue until al the mixture is used up.
  • Place the plate in the fridge. Heat tends to make the balls overly soft.
  • They can be eaten as soon as they are made.
  • The ginger adds a nice spicy overtone to it and they disappear off the plate very quickly.
  • ETA another way to prepare this instead of rolling into balls, roll the whole mixture into a long log about 1.5 cms thick, chill for half an hour and then slice into rounds.
