Ingredients
  • Dressing:
  • 1/4 cup lemon juice
  • 8 T canola oil
  • 2 T honey
  • 1 tsp Dijon mustard
  • 2 cloves garlic, peeled and minced
  • 1/2 tsp salt
  • 1 tsp black pepper
  • Salad:
  • 3 cups torn spinach leaves, washed and dried
  • 3 cups torn red-leaf lettuce, washed and dried
  • 2 ripe kiwi fruit, peeled and thinly sliced
  • 1 can (11 ounces) mandarin oranges, drained
  • 1/2 cup dried cranberries (dried cherries work well also, as could raisins but as a last resort)
  • 1 cup red onion, thinly sliced
  • 6 ounces soft goat cheese, cut into six 1/2-inch thick rounds
  • Bread

Directions
  1. In a small bowl, whisk together lemon juice, oil, honey, mustard, garlic, salt, and pepper. Set aside.
  2. Combine spinach and lettuce in a large bowl.
  3. Pour dressing over greens and toss to coat.
  4. Divide greens among 6 plates and garnish each with kiwi, mandarin oranges, cranberries, red onion, and a round of goat cheese. Serve with a crusty slice of bread.
  5. This salad also is great for a main course at lunchtime.
