How to make it

  • Preheat oven to 350F. Beat the egg yolks, 6T sugar and vanilla in a large bowl until pale yellow and thick.
  • In a seperate bowl beat the egg whites and cream of tarter to soft peaks, slowly add 3/4c of sugar and beat until stiff but not dry.
  • Fold together the egg yolks, egg whites and flour. Add 1/3 of the egg whites to the yolks, sift 1/3 of the flour over top and gently fold in. Repeat.
  • Pipe mixture onto parchment lined trays with a round tube leaving some space between as they spread. Sift a slight dusting of icing sugar overtop ladyfingers.
  • Bake about 12 to 15 minutes until lightly browned around edges.
