Three Cs Veggie Pie

- 2 1/4 cups herb seasoned croutons, crushed divided use shopping list
- 1/4 cup of melted butter for crust shopping list
- 1 cup of chopped onion shopping list
- 1 clove of garlic minced shopping list
- 2 tbsp of butter for veggie prep shopping list
- 1/2 tsp of dried savory shopping list
- 1/4 tsp of dried oregano shopping list
- 1/4 tsp of salt shopping list
- sprinkle or two of pepper shopping list
- pinch of nutmeg shopping list
- 4 cups of caullflower flowerets (about one head) shopping list
- 3 sliced peeled carrots generous cup shopping list
- 1 1/2 cups of cheddar cheese divided use shopping list
- 2 beaten eggs shopping list
- 1/4 cup of milk shopping list
How to make it
- Combine two cups of crushed seasoned croutons (fourth C)
- with melted butter.
- Press into a 9 inch pie plate.
- Bake in 375 degree oven for 8 to 10 minutes.
- Set aside to cool.
- In a skillet cook the onion and garlic in remaining butter til tender but not brown.
- Add herbs, salt and seasonings.
- Stir in cauliflower and carrots.
- cook covered over low heat for 10 to 12 minutes until the veggies are crisp but tender.
- Sprinkle with 1/2 of the sharp cheddar over the prepped crust.
- Spoon veggie mixture over the top.
- Combine eggs with the milk.
- Pour over the veggies.
- Bake uncoverd at 375 for fifteen minutes.
- Top with remaining half of the shredded cheddar, top with remaining quarter cup of crumbs and bake another five to ten minutes to melt the cheese and brown the crumbs.
- Let stand five minutes and serve cut into wedges.
