How to make it

  • Preheat oven to 375
  • Remove skins from chicken (optional)
  • Season chicken with spices and salt to taste
  • Add oil to large sautée pan and fry chicken over high heat, about 4-6 minutes each side until browned
  • Spray a 13 x 9 baking pan with Pam or grease lightly
  • Pour dry polenta in pan and top with rinsed beans
  • Add the water to the pan
  • Place chicken on polenta/beans mixture
  • Top chicken with salsa
  • Bake for about 50 minutes, covered works, but uncovered is fine.
  • Enjoy
