Easy Chicken Bake With Salsa And Crispy Polenta Recipe

This is an easy satisfying baked chicken recipe. Cooking with fresh salsa is so healthy! The polenta soaks up the juices from the salsa and herbed chicken and becomes like a yummy crust. I invented this, influenced by several recipes.

Ingredients
  • 2 T Olive oil
  • 2-3 pounds chicken thighs or pieces, skinned
  • 1.5-2 cups fresh salsa
  • 1 can rinsed black beans
  • 1 cup dry polenta (enough to cover bottom of pan about 1/8 an inch deep)
  • 1 T Italian Seasonings
  • 3/4 T Salt
  • 1 T Garlic powder
  • 1/8 Water or broth (just enough to wet the polenta)

Directions
  1. Preheat oven to 375
  2. Remove skins from chicken (optional)
  3. Season chicken with spices and salt to taste
  4. Add oil to large sautée pan and fry chicken over high heat, about 4-6 minutes each side until browned
  5. Spray a 13 x 9 baking pan with Pam or grease lightly
  6. Pour dry polenta in pan and top with rinsed beans
  7. Add the water to the pan
  8. Place chicken on polenta/beans mixture
  9. Top chicken with salsa
  10. Bake for about 50 minutes, covered works, but uncovered is fine.
  11. Enjoy
