Got this wonderful summer salad from my mom! I love all the flavors. Great buffet item.

Ingredients
  • 8 oz macaroni: cooked and drained
  • 20, oz pineapple chunks, drained
  • 1/2 cup chopped red or green or combos of both bell peppers
  • 1/2 cup shredded cheddar cheese
  • 2/3 cup mayonaisse
  • 1/2 cup apricot preserves
  • salt and pepper to taste

Directions
  1. Combine mayo and apricot preserves.
  2. Mix all other ingredients together and then blend in apricot mayo.
  3. Season to taste.
  4. Chill 1 hour before serving.
